Meatless Monday Recipe: Rice and Veggie Satay

Cooked brown or white rice
3 tbs vegetable oil
1 onion, diced
I cup sliced mushrooms
head of broccoli, cut in florets
1 cup peanut butter, creamy natural style
4 tbs soy sauce or tamari sauce
4 tbs lemon juice
2 tsp sugar
2 garlic cloves, crushed and chopped
½ cup water, add more if needed
½ tsp cayenne pepper


Heat vegetable oil in a large skillet. Add diced onion and cook on medium heat stirring occasionally until it becomes transparent. Add sliced mushrooms and broccoli florets. Cover and cook, stirring occasionally until broccoli is fork tender.

Peanut Sauce:  Combine the peanut butter, soy sauce, lemon juice, sugar, garlic, water and cayenne pepper. Stir until completely mixed. This can be mixed by hand or in a food processor.

Serve the heated rice topped with hot veggies. Pass the peanut sauce. Enjoy!
